Dear Friends,

The Better Process Control School (Acidified Foods), is an FDA-recognized training program designed for operators, supervisors, and manufacturers involved in producing thermally processed acidified foods.

Date: Oct 15-16, 2026
Location: #154 William Stringer Wing, Food Science, University of Missouri, Columbia, Missouri 65211.

This course meets the training requirements specified under FDA regulations 21 CFR 114.10 and 21 CFR 108.25. Participants will gain essential knowledge required for safe production and regulatory compliance in acidified food processing operations.

The course covers key topics including microbiology of thermally processed foods, sanitation for retorts and atmospheric cookers, container closure systems (glass and twist-off plastic), introduction to thermal processing, and mild thermal processing principles.

Examinations will follow each lecture and are based on the FDA-approved standardized curriculum. Exams are open book and multiple choice. Participants who achieve a minimum score of 70% will receive a Certificate of Course Completion, and their names will be submitted to the FDA.

 

Course Duration: 1.5 days
Oct 15: 8:30 AM – 4:30 PM
Aug 16: 8:30 AM – 12:30 PM
Lunch will be provided on Day 1.

Registration Fee: FREE for Missourians (Out of State Registrants Pay $450.00)
