QFK Readers Have Leg Up on Fair Competition

Readers of Quality for Keeps have an advantage when it comes to entering their home canned foods in local and county fairs. They know that blue ribbon products start with high quality fruits and vegetables processed in a safe manner.

Here are quality indicators fair judges look for:

  • Correct canning method and processing time for that food.

  • Complete, neat labels noting name of product, when canned and processing method used.

  • Standard canning jar and lid with good seal.

  • Lids and flats free of rust, dirt and stickiness.

  • Correct headspace for that product.

  • Good fill, not over packed, with good fluid level.

  • No trapped air bubbles.

  • Food at best stage of maturity for eating.

  • Attractive, natural color and uniform shape of pieces.

  • Clear canning liquid when appropriate.

  • Jelly that is transparent, not cloudy; quivers, yet holds shape.

  • Pickles not shriveled, misshapen or mushy.
