Timely Tip # 41

No-Cook Meals
A well-stocked pantry is essential for making delicious meals without cooking. The February and March, 2005 issues of Celebrate! featured information on stocking and using a healthy pantry. Here are some easy meals which combine prepared foods from the deli or grocery store with healthy kitchen staples.
Menu 1
♦ Roasted Chicken (prepared food
section of grocery store)
♦ Potato Salad (canned)
♦ Mixed Green Salad (bagged in produce section)
♦ Rolls (bakery)
♦ Fresh Fruit (produce section) and
Cookies
Menu 2
♦ Chicken Salad Wrap (use leftover roast chicken mixed with grapes, chopped celery, nuts, a little onion and moistened with reduced-fat mayo thinned with a tablespoon or two lemon or lime juice, wrapped with lettuce leaf in whole wheat tortilla)
♦ Sliced Tomatoes
♦ Melon
Menu 3
♦ Chef’s Salad (ham, turkey and/ or beef from deli, bagged salad mix, cherry tomatoes)
♦ Melba Toast or Crisp Bread Sticks
♦ Cut up Fruit garnished with a small scoop of vanilla ice cream
