Basic principles of food purchasing and selection, scientific principles and culinary fundamentals of food products in commercial food service operation.
This module is designed to familiarize students with food defense in a food preparation setting. Students will learn the basic steps in writing a food defense plan. This includes vulnerability assessment, countermeasure development, writing the defense plan and also includes writing a response plan. Included in the module are power point presentations of two different lengths, two different assignments that lead students through the steps of writing a food defense plan, and a bank of potential exam questions.
