Model food defense plans

Model food defense plans are provided for the following situations: meat processing facility, swine production facility, beef production facility, livestock auction barn, and farmer’s market. The models are designed to demonstrate the process of developing a food defense plan for different types of facilities within the food supply chain. The models are based on guidelines provided by USDA, FDA, and FSIS. They are intended for use as training aids. Each facility should go through the process and develop its own Food Defense plan based on the specific situation. The models assume that the facility in question adheres to the safety and sanitation programs set forth by the appropriate regulating agency. It is assumed that each facility maintains appropriate programs of sanitation, documentation, pest control, and shipping, storing and receiving protocols. In short, the Food Defense Plan is to be used in addition to best production practices.
