Pickling with Reduced Salt
Fresh pack pickles can be made without salt, however the quality is poor. The USDA Home Canning Guide provides recipes for pickles with reduced sodium content - both texture and flavor may be slightly different. You may wish to make small quantities first to determine if you like them.
The salt used in making fermented and brined pickled products is vital to safety as well as texture. DO NOT ATTEMPT TO REDUCE OR ELIMINATE SALT IN THE RECIPES.
