FOODS/NUTRITION - Exhibitors
must adhere to the following rules:

Food must be of reasonable quality to keep more than a
week. Do not send food items which will spoil quickly
such as casseroles, pizza, cream pies, items made with
cream cheese, etc.
-
Display food items on paper or disposable plates.
Plastic wrap will be removed so drying of the food will
extend exhibit life of the product. Please do not
exhibit expensive or keepsake containers!
-
Biscuits, cookies, muffins, and other small items should
be four per plate. Cakes and other bread products should
be exhibited in mini-versions (portions of 1/3 to 1/4 of
a larger total product).
-
Decorated cakes will be exhibited in the Cake Decorating
project.
-
Food samples are required for local judging. Any item
chosen for State Fair will not
require a sample.

Food Preservation
Examples: Canned, dried or pickled
foods (no cured hams), gift package of preserved foods,
educational displays, etc. For safety reasons, all Food
Preservation exhibits must follow these rules:

Canned goods/preserved items must follow the University
of Missouri guidelines for processing.

Each exhibit must be accompanied by an index card or
label which outlines procedures and recipes used in
processing and date of processing.

Any sign of spoilage or alteration from standard
processing guidelines will be basis for disqualification

No food should be sampled by judges at local judging.

MEATS
Items shown in this class that are
selected to go to the Missouri State Fair will be on display
in the Agriculture Building at the Missouri State Fair but
must be checked in at the 4-H Building. Only those hams
selected at county fairs as State Fair 4-H exhibits should
be checked in at the 4-H Building. Hams will be dually
enrolled in the Youth Division of the Country Ham Class and
may become eligible for sale if selected as champion. The
4-H
member is required to pay the $5.00
entry fee in the Agriculture Building and complete all entry
forms available in the 2009 Premium Book.
Rules for Country Cured Hams:
-
Hams in this class must consist of
hams that have been cured country style.
-
Ham weights accepted from 10 pounds
to 22 pounds, inclusive.
-
Top 4-H ham (Adair County
exhibitors only) will be eligible to sell at the
livestock sale.
-
The number of entries shall not
exceed 2 per person.
-
Hams in this class will be divided
by weight after they are entered into the show by the
Superintendent to equalize class size.
-
Commercial hams in this class will consist of whole hams
with bone In and may not be cut or sliced. Hams shall be
cured mildly and may or may not be tenderized. This
class is considered to consist principally of pumped
hams.
-
To maximize the child’s learning experience, members
showing in youth classes are encouraged to do their own
project work. The parent and child should decide how
much the member is able to do on their own, but having
someone else totally do the work for the member is
inappropriate.
-
All hams in this class must be USDA inspected either at
the origin or at the end of processing. Verification of
inspection should be available upon request.
